I know it’s not traditional to use tahini in tzatziki, but I find this addition adds a lot of flavor and creates a much smoother dip. Don’t limit yourself to just using this on shawarma and gyros. Try it on other dishes such as grilled meats or raw vegetables for a change of pace.

{ Makes a generous 2 cups (4 servings) }

1 large cucumber, peeled and grated (about 2 cups)
1 cup plain Greek yogurt
2 or 3 garlic cloves, minced
1 tablespoon tahini (sesame paste)
1 tablespoon fresh lemon juice
½ teaspoon salt, or to taste
 Chopped fresh parsley or dill, for garnish (optional)

1. In a medium bowl, stir together the cucumber, yogurt, garlic, tahini, lemon juice, and salt until well combined. Cover and chill until ready to serve.

2. Right before serving, sprinkle with chopped fresh parsley or dill, if desired.
